'Tis the Season to be Fishy

We never need an excuse to enjoy the best-quality fish and shellfish we can get our hands on, and with the countdown to Christmas in full swing, we're here to to inspire your festive menu this year.

Perfect for a New Year’s Eve celebration and all those fun-filled days in between, we feel its the perfect time to pull out all the stops and treat yourselves to something really special... and we have just the thing!

 A nod to those super-organised amongst you who have your main courses in mind but are looking for something to serve beforehand. Or perhaps you are still at the planning stage and are considering doing the double (fish & shellfish for both courses) what an excellent idea! We've pulled together some show-stopping starters and mouth-watering mains we guarantee that the whole family will enjoy!


We also know that what we drink with our food matters a lot, so we’ve asked those in the know on what we should be buying. Fantastic local wine supplier Butler's Wine Cellar have recommend some superb wine pairings for our festive seafood dishes which will elevate your celebratory meals to something truly memorable...

Christmas starters to begin...

The fresh, clean flavours of Beetroot Gravadlax (not to mention its wow factor!) are brilliant for both canapés and as a sit-down starter, with just a little horseradish cream and dill.

Butler's suggests this goes beautifully with Cremant de Bourgogne Manoir du Carra, a delicious fizz with a fruity richness that’s also great on its own as an aperitif. Plus, you don’t often see a sparkling Beaujolais – now there’s a fun wine fact for your guests!

If you’d prefer less prep time but still want to impress, Moules Marinière is a quick restaurant-style dish that’s great either individually portioned or brought straight to the table for sharing. All you need is good bread for mopping. Not to mention some Balland Sancerre – its fresh citrus and herbaceous flavours pair brilliantly with our live Shetland rope-grown mussels.

Alternatively if you are looking to push the boat out this year, then our plump and delicious Scottish Hand Dived Kind Scallops are a real luxury that always feature on our table over the festive season. Featured in November's Dish of the Month, they're a great alternative to a traditional starter. So simple to cook, their slightly sweet yet delicate flavour is guaranteed to be enjoyed by adults and children alike.

If you are keen to stick with festive flavours, a particular favourite is scallops with curried parsnip purée, parsnip crisps and pomegranate dressing. With fresh pear and gentle spices on the nose and with a stone fruit character and minerality on the palate, this delicious Verus Pinot Gris should pair very well.

Show stopping Christmas mains...

Moving onto the main event and a salmon centrepiece has got to be the go-to dish for fish-lovers. And this year we have you covered with our brand-new Scottish Loch Duart Scottish Salmon en Croûte (seasonal).

Handmade with care right here at Nutritious Fish and can be delivered straight to your door, it features our highest-welfare Scottish Loch Duart salmon fillet with a lemon, horseradish and cream cheese sauce. Combined with a generous layer of spinach, it is finally beautifully enveloped in buttery flaky puff pastry. A meal to impress that also tastes great as leftovers the next day, this recipe works equally well with either our Scottish Loch Duart Salmon or ChalkStream® Rainbow Trout whole side fillets.

Both these Salmon and Trout main dishes would pair beautifully with this Blank Bottle Helter Skelter wine, made by a funky South African producer. It’s concentrated and juicy, full of ripe fruit flavours and balancing acidity; perfect for cutting though the richness of the salmon. In fact, this drinkable number stands up nicely to a lot of other powerful, rich foods that you’ll be enjoying over Christmas.

Our final Christmas main idea is serving a spectacular Seafood Paella. Featuring monkfish, clams, king prawns, fresh squid and mussels, its a vibrant and hearty dish, packed full of flavours that go particularly well with a good Spanish white.


This Alma Atlantica from Rias Baixas has a lovely minerality and fragrance, and is regarded as one of the best Albariños around with its clean citrus flavours and stoned fruit on the palate. Rosé also works well with paella, and this Provençal Domaine Rimauresq is a real treat – finely balanced with savoury, spicy red fruit, a bright acidity and a cleansing, long finish.
