Probably the most famous dish in Cambodia, 'Amok' means 'to steam' - so cook this one gently. New to our range of curry pastes from Henfield-based chef Neha Hampton.
Using this curry paste couldn't be simpler: start by adding paste to pan and warm through for a few minutes until aromatic. Then add 400ml of coconut milk and bring to a gentle simmer. Add 300g of white fish (or your own choice of fish / shellfish) and gently simmer until cooked through. Taste and adjust seasoning with fish sauce or salt, palm sugar or sugar, then serve with steamed jasmine rice and a crunchy colourful salad.
