Using this curry paste couldn't be simpler: just add 750g of mussels (or your own choice of fish / shellfish), 400ml of coconut milk and simmer until cooked. Adjust seasoning with fish sauce or salt, palm sugar or sugar and garnish with coriander or Thai basil and enjoy.
