ChalkStream® has the only rainbow trout farms on the Test and Itchen Rivers in Hampshire. Similar to terroir in wine, it's the pure chalkstream water that gives these fish their unique fresh, clean taste. ChalkStream® are recognised for producing to the highest standards of welfare, food safety and environmental and ecological care.
Fresh trout is one of the richest sources of long-chain Omega-3 fatty acids: essential for a healthy heart and brain function. The quality of ChalkStream® rainbow trout is such that it is designated sashimi-grade and does not require freezing before eating raw.
These two beautiful rainbow trout whole fillets each weigh 600-700g. Each fillet is boned, scaled and ready to cook whole, or cut into portions for a family meal - you'll get 8-10 good portions from these two fillets. This trout also freezes really well, either whole or once you have cut into portions.
