    ChalkStream® has the only rainbow trout farms on the Test and Itchen Rivers in Hampshire. Similar to terroir in wine, it's the pure chalkstream water that gives these fish their unique fresh, clean taste. ChalkStream® are recognised for producing to the highest standards of welfare, food safety and environmental and ecological care.

     

    Fresh trout is one of the richest sources of long-chain Omega-3 fatty acids: essential for a healthy heart and brain function.

     

    We can supply x4, x6 or x8 ChalkStream® trout fillets which are ready to cook or freeze and use throughout the month. We'll wrap your fillets in compostable greaseproof paper and in convenient packs of two or four (your choice!), fully labelled and dated so they're ready for the freezer if you're not cooking straightaway.

     

    Sashimi-grade quality

    The quality of ChalkStream® rainbow trout is such that it is designated sashimi-grade and does not require freezing before eating raw.

     

    Generous fillet portions

    Our portion fillets are a minimum of 180-200g* each, which you'll find is much more generous than your usual supermarket portion. This means it goes further and provides better value-for-money.

     

    Plastic-free sustainable packaging

    We use plant-based, compostable packaging for our fresh fish paper wrapping, labels and bags. You can freeze your fresh fish in the paper it arrives in and, when you have finished with it, add it to your food waste bin, compost bin or garden compost and it will break down into organic material in a matter of weeks.

      ChalkStream® trout is a high-welfare farmed fish. The secret to these beautiful trout is the famous Chalk Streams, Test and Itchen in Hampshire. Spring water that has been filtered through the chalk down land into underground aquifers, feeds these rivers. The water is rated class A by the Environment Agency, the highest achievable grade. ChalkStream® farms are certified under the leading quality standards and the RSPCA Assurance Scheme.     • How should I store my fish?

      When we deliver your order, pop it straight in the fridge (in the compostable greaseproof paper in which it is wrapped). Fresh fish is best enjoyed the same day it's delivered by us to you, or within 2 days. Each pack features a label with a 'Use By' date which will be 2 days after the date your fish was packed and delivered.

       

      Alternatively, if you're planning to eat your fish 2+ days later, freezing is recommended to maintain freshness. To freeze your fish, place it straight in the freezer as soon as possible - it freezes well in the compostable greaseproof paper in which it is wrapped. It will be fine for up to two months after the 'Use By' date. Defrost your fish thoroughly before use and, once defrosted, use on the same day. Do not re-freeze.

       

      Please remember to dispose of the compostable greaseproof paper in your food waste bin, compost bin or garden compost. It will break down into organic material in a matter of weeks.

    • Omega-3 fats

      Omega-3 fats are a group of unsaturated fats that we need to stay healthy – especially for heart health. Eating foods high in omega-3 fats could help to prevent heart attacks and strokes.

       

      There are different types of omega-3 fats which are found in different foods. The main ones are:

       

      ALA (alpha linolenic acid)

      • ALA is essential for good health, but our bodies can’t make it, so we need to get it from the foods we eat. It’s mainly found in vegetable oils, nuts and seeds.

       

      EPA (eicosapentaenoic acid) and DHA (docosahexaenoic acid)

      • We need these types of omega-3 fats for a healthy heart and blood circulation. Our bodies can make some of these fats from the ALA in the food we eat, but only a small amount. So, it’s good to eat foods that already contain them.

       

      Oily fish including sardines, salmon, trout and mackerel are the best source of EPA and DHA.
