Grilled salmon with borlotti beans and ‘nduja

Here he cooks his borlotti beans from scratch to infuse them with added flavour from a fresh vegetable stock - if you're pushed for time, you could take a shortcut by using cooked borlottis from a can or jar, adding a little of your own flavoured stock.
