    • How should I store my shellfish?

Fresh scallops, prawns & squid: best eaten on the day of delivery, or within 1-2 days. Store in your fridge and make sure they're in a covered container. To freeze place in the freezer upon delivery and consume within 2 months. Write the date on the packaging before freezing. Do not re-freeze after defrosting.

Live mussels: store in open containers in the fridge so they can breathe, loosely covered with clean, damp paper towels or cloths to prevent them from drying out. The optimum storage temperature is 4-8°C. Temperatures of 1°C or lower (especially freezing temperatures less than 0°C) can kill live shellfish. fresh squid is best eaten on the day of delivery, or within 1-2 days.

    • Provenance

Scallops: from the Shetland King Scallop Fishery which has achieved Marine Stewardship Council (MSC) status for sustainable management practices. The clean, nutrient-rich North Atlantic waters around Shetland’s coastline create the perfect conditions for these shellfish to thrive, giving them a sweet, delicate flavour and meaty texture. See main product listing.

Mussels: from Westcountry Mussels based in St. Austell Bay in Cornwall. These mussels are grown in the highest-grade clean ocean waters, providing the very best quality mussels available. See main product listing.

Prawns: grown in Lincolnshire, in a closed-loop aquaculture system which allows for sustainable inland production of warm saltwater prawns. See main product listing.

Squid: mostly from our local Sussex waters, but sometimes from elsewhere in the UK, depending on availability. The Sussex day-boats land their catch within hours of capture, to ensure the fish is of the highest quality. When squid are temporarily unavailable from the local sea area, we will only source them from sustainable stocks within the UK. See main product listing.
