Turbot is a flatfish with a good-flavoured, firm white flesh and a meaty taste. It's one of the finest fish available around our coastlines and as such is highly-prized. A very special treat for a special occasion.
We can supply wild turbot in a range of sizes to suit the number of people you're serving. They can be supplied as whole fish to cook on the bone (recommended for a really tasty fish - suggested recipe here) - alternatively, we can supply filleted.
Here's a quick guide to buying:
Small: 500g - 1kg turbot = 2 people
Medium: 1.5kg - 2kg = 4 people
Large: 2.5 - 3kg = 6 people
Extra large: 3.5 - 4kg = 8 people
The weights above are for whole fish BEFORE filleting.
If you would like your fish supplied filleted, the weight of the fish will be around 35% of the starting weight above:
i.e. a 1kg fish provides 350g of fillet meat
i.e. a 4kg fish provides 1.4kg of fillet meat

Our wild turbot are mostly from our local Sussex waters, but sometimes from elsewhere in the UK, depending on availability.
The Sussex day-boats land their catch within hours of capture, to ensure the fish is of the highest quality. When these fish are temporarily unavailable from the local sea area, we will only source them from sustainable stocks within the UK.
When we deliver your order, put it straight in the fridge. Fresh fish is best enjoyed the same day it's delivered or within 2 days. Each pack features a label with a 'Use By' date which will be 2 days after the date your fish was packed. If your fish is wrapped in paper, this is compostable, so it can go in your food waste bin or composter.
Alternatively, if you're planning to eat your fish 2+ days later, freezing is recommended to maintain freshness. Ideally freeze your fish as soon as possible on the delivery day. Remove all of the packaging and place in a freezer bag (remove excess air) or airtight freezer container. Defrost thoroughly before use and eat on the same day. Do not re-freeze. Best within 2 months of freezing.
