We start with whole fresh salmon, harvested for us each week in Scotland. Each fish is expertly hand filleted and cut into generous 180g-200g portions. Our portions are cut, packed and delivered on the same day to maintain maximum freshness. Everything comes wrapped in our signature compostable packaging so it's plastic-free.

Loch Duart have been producing the finest farmed salmon in North West Scotland for 20 years. They're recognised for producing to very high welfare standards, monitored by RSPCA Freedom Foods code of conduct. Designated sashimi-grade, which means the fish can be eaten raw without the need for freezing first.
The sustainability of fish can vary significantly depending on how and where it has been caught or farmed. Many single species are caught or farmed in a variety of ways and this range shows that, within a species, some sources may be more sustainable than others.
We aim to use the 1-5 traffic light system developed by the Marine Conservation Society to help you choose the most environmentally sustainable UK fish.
'Best choices' are rated 1 and 2 (green), 'Fish to Avoid' are rated 5 (red). Ratings 3 and 4 mean 'Think' (yellow and amber), as there are better rated alternatives.
Farmed salmon is a better choice than wild salmon. Stocks of wild Atlantic salmon are depleted. Scientists recommend that fishing for salmon only takes place in rivers where stocks are at full reproductive capacity or above conservation limits.
When buying farmed salmon, if it is certified by the RSPCA Freedom Foods scheme, this ensures that high welfare standards are met during production, including reduced stocking densities.

When we deliver your fresh fish, it should go straight into the fridge. It's best enjoyed the day of delivery or within 2 days. Each pack is labelled with a 'Use By' date 2 days after the date your fish was packed. The paper in which your fish is wrapped is compostable, so it can go in your food waste bin or composter.
If you're planning to eat your fish 2+ days after delivery, freezing is recommended to maintain quality and freshness. Ideally freeze your fish as soon as possible on delivery day, keeping it in the paper packaging so that you retain the date label - it's best within 2 months of delivery. Defrost thoroughly before use and eat on the same day. Do not re-freeze.
