We start with whole fresh salmon, harvested for us each week in Scotland. The 'Royal Fillet' is a prime loin section from the thickest part of the fillet, so-called as this prime cut was traditionally reserved for the Russian Tsars. Expertly skinned, trimmed of fat and squared up, it's ready for you to slice for sashmi.
