Lemon sole is lemon-shaped flatfish with delicate white flesh, best cooked simply, either grilled or fried, and served with a light sauce.
These sole weigh around 300-400g and are supplied as whole fish - gutted and cleaned - to cook on the bone, or fillet at home.

When we deliver your fresh fish, it should go straight into the fridge. It's best enjoyed the day of delivery or within 2 days. Each pack is labelled with a 'Use By' date 2 days after the date your fish was packed. The paper in which your fish is wrapped is compostable, so it can go in your food waste bin or composter.
If you're planning to eat your fish 2+ days after delivery, freezing is recommended to maintain quality and freshness. Ideally freeze your fish as soon as possible on delivery day, keeping it in the paper packaging so that you retain the date label - it's best within 2 months of delivery. Defrost thoroughly before use and eat on the same day. Do not re-freeze.
