The sustainability of fish can vary significantly depending on how and where it has been caught or farmed. Many single species are caught or farmed in a variety of ways and this range shows that, within a species, some sources may be more sustainable than others.
We aim to use the 1-5 traffic light system developed by the Marine Conservation Society to help you choose the most environmentally sustainable UK fish. 'Best choices' are rated 1 and 2 (green), 'Fish to Avoid' are rated 5 (red). Ratings 3 and 4 mean 'Think' (yellow and amber), as there are better rated alternatives.
Our wild lemon sole are available in packs of 2 and you can choose to receive them whole (gutted, skin on) or filleted (bone, head & tail removed; skin-on fillets), depending on how you plan to cook them.
Expected yields after preparation: When you choose to have your lemon sole supplied whole (gutted, skin on), you can expect each fish to weigh between 300g-400g When you choose to have your lemon sole filleted, you can expect to receive around 50% of the fish weight above (i.e. 150g-200g of fillet meat per fish)
We'd recommend one lemon sole per person for a main meal serving.
When we deliver your fresh fish, it should go straight into the fridge. It's best enjoyed the day of delivery or within 2 days. Each pack is labelled with a 'Use By' date 2 days after the date your fish was packed. The paper in which your fish is wrapped is compostable, so it can go in your food waste bin or composter.
If you're planning to eat your fish 2+ days after delivery, freezing is recommended to maintain quality and freshness. Ideally freeze your fish as soon as possible on delivery day, keeping it in the paper packaging so that you retain the date label - it's best within 2 months of delivery. Defrost thoroughly before use and eat on the same day. Do not re-freeze
