Plaice is a striking flat fish, speckled with distinctive orange spots - the brightness of which are often used as an indication of freshness.
Its subtle flavour and juicy flesh respond well to simple cooking, either grilled or fried, and served with a light sauce, and also excellent when breadcrumbed and gently pan-fried.
